RASPBERRY RIPE PROTEIN BARS RECIPE
Dark chocolate, raspberries and coconut with a punch of protein and healthy fats to keep you fuller for longer and help keep cravings away. Basically a healthier cherry ripe bar made with good ingredients, dairy free, gluten free and refined sugar free.
1 cup frozen raspberries (semi-defrosted)
1 cup organic desiccated coconut
1/4 cup almond meal
1/4 cup Botanika Blends raspberry coconut plant protein
1 tbsp pure maple syrup
1 tsp liquid coconut oil
100g dark chocolate
Blitz all ingredients (except choc) in a blender until combined.
Firmly press into shape into a slice tray and freeze for 3 hours or until hard set.
Slice into bars, return to freezer whilst preparing chocolate.
Melt dark chocolate. Using two forks coat each bar with chocolate and transfer to a lined tray. Return to freezer to set.
Store in fridge (soft centre) or freezer (firm centre) until ready to eat.
I used the Botanika Blends Raspberry Coconut Flavoured Plant Protein to make these, this flavour has the most amazing taste and will make these bars irresistibly good. Their protein is also organic, free from nasties and contains digestive enzymes and pre-biotics for gut support.
